Oats Corn Sandwich

In India, children’s day is celebrated on the 14th of November every year on the birth anniversary of first PM of India. Before the death of Pandit Jawaharlal Nehru, Indians celebrated children’s day on 20th November (international children’s day by U.N). As our first prime minister loved children the most. He once said “The children of today will make the India of tomorrow.” The day celebrates and acknowledges children’s rights.

Children’s day is celebrated in almost every school across India. In my school, various cultural programs, play’s, fetes and fancy dress competitions were organised. Children dress in Chacha Nehru’s signature attire, a red rose tucked in their sherwanis. Colourful carnivals and fetes were organised and our teachers put up stalls of food, toys and games on the occasion of children’s day.

Income earned from the stalls, usually went to charities for children or donated to orphanages. That is the spirit of children’s day. We celebrated it with great enthusiasm fun and much love.

Cooking time: 10 minutes

Ingredients

  • 8 sandwich bread slices
  • 1 cup oats
  • 1-2 tsp olive oil
  • 1 1/4 cup full cream milk
  • 1/2 tbsp chopped onion
  • 1/2 tbsp frozen corn
  • 1 chopped tomato
  • Chopped cilantro
  • 1 tbsp butter
  • Some Black pepper freshly grounded

Method

  1. Heat olive oil in a non-stick pot and sauté the onion till it becomes soft.
  2. Add oats and slightly roast it.
  3. Add tomatoes, corn, cilantro and black pepper and mix all the ingredients.
  4. Pour milk and sauté the mixture on low flame till it attains a semi- solid consistency ; then turn off the stove.
  5. Divide the mixture into equal portions and spread the mixture on one side of a slice and put another slice on top of it.
  6. Apply some butter on one side of the sandwich and grill it lightly.
  7. Enjoy it hot with juice or coffee.
  8. Enjoy 😊

  2. How wonderful ‘children’s day’ very wise to celebrate the future! Your first PM was indeed a very wise man to instill confidence in the future generation. Would’ve loved to see a picture of the children in their celebratory dress!🙏🏽. This recipe sounds really nice an interesting way to use oats, will try this too!
